Autumn One Pot

With the nights drawing in, now is the perfect time to enjoy an easy one pot supper.  After a day out in the countryside or spent at the shops, this simple supper will be enjoyed by everyone.

Heat 1tbsp of olive oil in a pan and cook the sausages until they are brown and then remove from the pan. Add a finely chopped onion, a sliced red pepper and a crushed garlic clove to the pan and cook until they are all softened – about five minutes.

Add 250g of lentils, the sausages, 150ml of vegetable stock and 125ml of red wine.  Bring to the boil and simmer for about 20 minutes. 

When the lentils are soft and the sausages are cooked, serve and enjoy.

Tastes great with crusty bread – even better if it’s homemade!
