Broccoli and Stilton Soup Recipe

As the autumnal nights draw in, what could be more cosy than some homemade soup and bread?  Here’s a delicious recipe for Broccoli and Stilton soup which can be made quickly and simply.

2tbsp rapeseed oil
1 finely chopped onion
1 sliced stick of celery
1 sliced leek
1 diced medium potato
1 knob of butter
1l low salt or homemade chicken or vegetable stock
1 roughly chopped head broccoli
140g crumbled Stilton or other blue cheese

1 Heat the rapeseed oil in a large saucepan, add the onions and cook on medium heat until soft.  Add a splash of water if the onions start to catch.
2 Add the celery, leek, potato and butter, stir until melted, cover with lid.
3 Sweat for 5 minutes, then remove the lid.
4 Pour in the stock, add chunky bits of broccoli stalk, cook for 10-15 minutes until all vegetables are soft.
5 Add the rest of the broccoli and cook for 5 more minutes.
6 Transfer to a blender, blitz until smooth.
7 Stir in the cheese.
8 Season with black pepper and serve.
