Picnic Treats

It’s always fun to eat outside and take a picnic with you when the weather’s warm.  Although sometimes a picnic in the car with the rain on the roof is just as memorable!  After a hunt for something a little bit different – how about trying this Pinwheel Bake recipe which we found on the Tesco Good Food site.

Ingredients
1x325g sheet of all butter puff pastry
150g fresh tomato and basil pasta sauce
1x250g ball mozzarella, drained and torn into small pieces
3 slices wafer thin ham, torn (optional if you’d rather have a vegetarian option)
50g cheddar cheese, grated
2 sundried tomatoes, chopped
Fresh basil leaves
1 egg, beaten
15g parmesan, finely grated
 
Method
Preheat the oven to 200c, 180c fan, gas 6.
Unroll the pastry sheet onto a baking sheet lined with non-stick baking paper.
Spread the tomato sauce onto the the pastry, leaving a 1cm border.
Scatter with ham, cheese, sundried tomato and basil.
Take one of the short ends and rolls up as tightly as possible.
Chill for 30 minutes, or until firm to the touch.
Cut the roll into 12 equal slices and place (well spaced apart) on 2 baking sheets.
Brush the tops with beaten egg and scatter over the parmesan.
Bake for 15-20 minutes until puffed up and golden.
Leave to cool for 5 minutes before serving.
