Simple Mediterranean recipes…

Many of us are enjoying the great outdoors this summer, so here are a few tasty summer recipe ideas for you to enjoy:
Persian Kotlets
250g of minced lamb
4 medium potatoes
1 egg
2 onions
½ teaspoon of turmeric
½ teaspoon of ground cinnamon
Salt and pepper

1)   Peel the potatoes and cut in half, and then add to a salted boiling water. Cook for around 10 minutes.

2)   Then cool the potatoes in cold water, until they are cool enough for you to handle, and then grate into a mixing bowl with the onion.

3)   Add the minced meat, eggs and seasoning to the bowl and mix by hand, once it’s completely mixed you can form them around your skewers.

4)   Barbeque until cooked through.

If you are using wooden skewers on your BBQ it’s always a good idea to soak them in water first, as this will prevent them from burning through, and you loosing half of your chicken into the BBQ pit.
Mozzarella and tomato salad
2 packs of buffalo mozzarella
5 ripe tomatoes, preferably not refrigerated (as this takes out the flavour)
1 red onion
Olive oil
Red wine vinegar or balsamic if you prefer
Fresh basil
Salt and Pepper
1)   Drain off the water from your mozzarella and tear into thumb size portions.

2)   Slice your tomatoes and onions into rounds and add to the bowl.

3)   In a separate mixing bowl add two tablespoons of olive oil to one tablespoon of red wine vinegar, whisk and season to taste.

4)   Then add your vinaigrette to the rest of the ingredients and mix, adding fresh basil and more salt and pepper if required.
Sweet cooked red peppers with toasts
2 red peppers cut into quarters
1 clove of garlic, slightly bruised with a knife – this helps to release the flavour
Olive oil – about a tablespoon
White Bread or baguette sliced
Tomato cut in half
1)   Grill your peppers on a flat baking tray until the skin goes black, once they have blackened scrap off the skin and cut into small slices.

2)   Grill the bread on both sides or bake.

3)   Once the bread is a nice and golden remove from the oven and rub garlic over the top of each slice. Then squeeze the tomato over the top.

4)   Then add the red pepper slices to the top and serve whilst hot.
