Spring Chicken in a Pot

As thoughts move towards the warmer weather, we might be looking at food with thoughts of summer.  Until it actually arrives, how about trying this summer casserole that we found in the BBC Good Food recipe collection?


  • 1tbsp olive oil
  • 1 chopped onion
  • 500g boneless chicken thighs (skinless)
  • 300g small new potatoes
  • 425ml low salt vegetable stock
  • 350g broccoli
  • 350g spring greens
  • 140g petits pois
  • Bunch spring onions – sliced
  • 2 tbsp pesto


  1. Heat the oil in a large heavy pan.
  2. Gently fry the onion for 5 minutes.
  3. Add the chicken and fry until lightly coloured.
  4. Add the potatoes, stock and plenty of freshly ground black pepper.
  5. Bring to the boil.
  6. Cover and simmer for 30 minutes – the potatoes should be tender and the chicken cooked.
  7. (Can be frozen now)
  8. Add the broccoli, spring greens, petit pois and spring onions – stir well.
  9. Bring to the boil.
  10. Cover and cook for 5 minutes more.
  11. Stir in pesto and heat through.
