Spring into Spring with these delicious seasonal recipes…

With the promise of warmer weather on the way we can start to think about recipes that include seasonal vegetables such as asparagus, broad beans, water cress, first lettuce shoots, spring greens, Halibut and Salmon. Here are three of our favourite recipes we have chosen from the BBC’s Spring recipe collection:

Spring green fattoush – we chose this recipe as broad beans are deliciously sweet at this time of year.

You will need:

500g broad beans, frozen or fresh
1 cucumber
3 wholemeal pitta breads
zest and juice 1 lemon  
4 tbsp olive oil  
1 tsp caster sugar
20g bunch mint  smaller leaves picked, rest very roughly chopped
20g bunch flat-leaf parsley, very roughly chopped
small bunch chives, snipped
170g feta cheese, crumbled

Hot-smoked salmon salad with a chilli lemon dressing

This only takes a few minutes to put together so it’s a great meal to have on a work night and sophisticated enough to serve up when entertaining

You will need:

500g new potatoes, halved
200g pack asparagus tips
250g bag mixed salad leaves (including young beetroot leaves and watercress)
Parsley and mint, leaves picked and roughly chopped
140g radishes, thinly sliced
8 x hot-smoked salmon steaks, skin removed
4 spring onions, sliced diagonally

For the dressing
3 tbsp lemon juice
125ml olive oil
1 tsp wholegrain mustard
2 red chillies

Parmesan spring chicken – this is a lovely light, spring salad with a crunch of Parmesan

1 egg white
5 tbsp finely grated Parmesan
4 boneless, skinless chicken breast
400g new potatoes, cut into small cubes
140g frozen peas
good handful baby spinach leaves
1 tbsp white wine vinegar
2 tsp olive oil
