It’s a lovely time of year when all of the berries are at their best; strawberries, blueberries and raspberries, as well as being plentiful in shops, markets and farms. So we checked out a few summer pudding recipes to bring a bit of summer sun into our kitchens.
The classic summer pudding – this is a great way to bring summer fruits together, and use left-over bread. We checked out the BBC Good Food recipe.
You will need:
- 300g strawberries
- 250g blackberries
- 100g redcurrants
- 500g raspberries
- OR 1¼kg/2lb 12oz mixed berries and currants of your choice
- 175g golden caster sugar
- 7 slices day-old white bread, from a square, medium-cut loaf

Summer pudding trifles…
This is a twist on a classic trifle recipe and you will need the following ingredients:
- 600g raspberries
- 50g golden caster sugar
- 1 Madeira loaf (about 300g/10oz)
- 227ml tub clotted cream
- icing sugar, to serve

Summer berry terrine Something a bit different – the recipe says that it is perfect for parties:
- 450-500g/1lb-1lb 2oz plain Madeira cake
For the compote
- 1kg mixed berries (include strawberries and red and blackcurrants, if possible)
- 100g golden caster sugar
- 2 tbsp cassis (blackcurrant liqueur), optional
- coulis, to serve (see 'Goes well with' below)
