Tomato and red onion Tarte Tatin recipe...

This is the most delicious recipe and is perfect for a starter, lunch or picnic, it’s easy, cheap to make and the ingredients are in season.
You will need:
12 cherry tomatoes, chopped in half
2 red onions
Balsamic vinegar – 100 ml approx
2 tsp sugar
Fresh Basil
Ready roll short crust pastry
Cheese of your choice, either goats or mozzarella works well
A frying pan with a metal handle
Preheat your oven to 190c.
1. Chop the onions into rounds, add them to a hot pan with the balsamic vinegar.
2. Cook for around 5 minutes, add the sugar until it caramelises and goes sticky, you might need to add more sugar at this stage.
3. Once they are cooked add the tomatoes to the pan with the cut side of the tomato facing down, make sure these are distributed evenly around your pan.
4. Place your pastry on top of your frying pan, being careful to tuck it in around the outsides.
5. Then place it in your preheated oven for around 15 minutes, or until the pastry turns brown.
6. Once it is cooked, cut carefully around the outside of the pastry and then put a plate over the top and turn it upside down, then you can add the cheese.
I normally like to place it back onto an oven proof tray at this stage so that the sides go crispy and the cheese goes brown, but you don't necessarily need to.
Then place your fresh basil on top and serve - rocket is a perfect accompaniment to this tart.
