Along with the return to school and new starts in September, the Great British Bake Off has returned to our screens.  If you’re inspired but not sure where to start, the Surrey Hills Cookery School in Leatherhead is the ideal place.

They offer small class instruction and use seasonal food and will help you improve your skills and techniques. New classes and dates are added during the year, so do check their website for up to date details http://www.surreyhillscookeryschool.co.uk/cookery-courses-surrey.

In the meantime, why not try the recipe for Honey and Citrus Glaze Salmon, accompanied by a seasonal salad, it’s a simple delicious supper:

Ingredients (serves 4)

4 salmon fillets
4 tablespoons of honey
3 tablespoons of fresh lime juice
2 tablespoons of orange juice
Sea salt and ground black pepper

Method

Grease a baking pan and heat your oven to 200c/Gas 6.
Place salmon skin side down in baking tin.
Combine honey, lime juice and orange juice and stir well.
Sprinkle the fillets with salt and pepper.
Spoon the honey mixture over the fillets.
Bake for 10-12 minutes, or until the fish flakes easily.
